Vegetarian Chili

Ingredients
1 tablespoon vegetable oil
12 oz. (= 1 pound of ground beef) ground beef substitute
30 ounces kidney beans, fresh cooked or canned
(drain and rinse beans if canned)
2 medium onions (chopped)
2 bell peppers (chopped)
3 medium tomatoes (chopped)
2 small chili peppers (chopped)
3 tablespoons chili powder
3 tablespoons paprika powder
1/2 teaspoon salt
1/2 teaspoon black pepper
1 can (6 ounces) tomato paste
1/2 cup ketchup
1 tablespoon soy sauce
1 can (20 ounces) pineapple chunks (drained)
Directions
Heat the oil in a large skillet on medium high heat. Add the ground beef substitute and cook for 3 minutes, stirring frequently. Add onions, bell peppers, tomatoes, chili peppers, chili powder, paprika powder, salt and black pepper. Cook for 5 minutes, stirring frequently. Add a little water if it starts to stick at the bottom of the skillet. Reduce to medium heat and add tomato paste, ketchup, soy sauce and kidney beans. Cook for 5 minutes, stirring frequently. Cover, reduce to medium low heat and cook for 10 minutes, stirring occasionally. Add pineapple, cover and cook for 10 minutes, stirring occasionally.
