| Maple Syrup Shortbreads

| Shortbread Ingredients | |
|
1/2 cup Unsalted butter (I typically use margarine) 1/4 cup Sugar |
1 cup All-purpose flour |
| Maple Topping Ingredients | |

3/4 cup Packed brown sugar 1/3 cup Pure maple syrup (So it better be Canadian!) 1 teaspoon Vanilla |
1 tablespoon Unsalted butter -- room temp. (Or again - Marge. I yank it straight out of the refridgerator) |

| 1/2 cup Chopped toasted walnuts (I NEVER put in the nuts, I have too many friends who are allergic to them, so I don't know if they taste good with them.) | |

For shortbread: Preheat oven to 350F degrees. If you don't have a stickless pan, butter away madly! (Or cheat and use a spray like I do.) Cream butter and sugar with mixer until light and fluffy. Add flour and mix just until blended; do not form ball. Pat into bottom of prepared dish. Bake until shortbread is light brown, about 25 minutes. For topping: Beat sugar, maple syrup and butter to blend. Beat in egg and vanilla. Pour over shortbread. Sprinkle evenly with walnuts. (If you're using them) Bake until topping is set, about 25 minutes. Cool on rack. Cut into 1-1/2" squares. (Mine typically get cut into fingers) Refrigerate when done. (If you have any left to stick in the fridge.) |
