2 egg whites 1/4 tsp. cream of tartar 3/4 cup sugar 1 cup chocolate chips |
green food coloring 1 tsp peppermint extract (not mint, and NOT SPEARMINT -- yuck!) |

| Separate eggs while cold, but bring to room temperature before beating. Make sure no speck of yolk gets in. Beat with cream of tartar until foamy, then gradually add sugar while beating until stiff peaks form. Stir in chocolate chips, food coloring, and peppermint. Drop on brown paper or foil-lined cookie sheet. Preheat oven to 350, and turn down to 175 when you put them in. Bake for probably an hour, until they're crispy. Don't let them turn brown. When done right they dissolve when they get in your mouth. | |

So I decided to google my name, just for fun, and under Momma Snider I found two sites where my recipes have been shared! I feel so honored! And if you liked those Andes cookies, here's another of my favorites. (We call them Boogers, but you can call them something dignified if you want.) |
