| Baked Chicken Parmesan with Spinach Pasta

2 skinless, boneless chicken breast halves 2 egg whites 1 bag/box of spinach or whole wheat pasta bread crumbs |
your favorite pasta sauce Parmesan cheese, freshly grated, of course (I don't think it would be near as good with the dehydrated, powdered stuff) |

Preheat oven to 400º (F). Place two egg whites in a bowl and beat lightly. Pour breadcrumbs onto a plate (I add some extra parmesan to the breadcrumbs, as well). Dip chicken breasts into the egg whites, making sure to coat well. Place the chicken breasts into the breadcrumbs, making sure to coat well on both sides. Place the breasts onto a baking sheet (I use a baking stone) and bake for 10-15 minutes each side or until the breadcrumbs are golden brown. While the chicken is cooking, cook the pasta in boiling water and heat the pasta sauce in a saucepan or microwaveable bowl. Drain the pasta when done. Place a portion of the pasta on a plate, making a bed for your chicken. Place a chicken breast on the pasta and spoon sauce over top. Sprinkle with the freshly grated parmesan cheese (liberally if making it for me) ;) Enjoy! |
