1 boxed carrot cake mix (I used large Duncan Hines mix for a 13x9” pan) 1/2 cup melted butter 1/2 cup water 4 eggs 4 oz (1/2 jar) of maraschino cherries, chopped (my addition) |
8 oz can of crushed pineapple, undrained. 1 cup chopped macadamia nuts (doubled from the original recipe, use the nuts of your choice, macadamia nuts were on sale). 1 cup shredded coconut 1/2 cup raisins |

Preheat oven to 350º. Dump cake mix into bowl, add melted butter, water, and eggs. Mix until smooth. Add other ingredients and mix. Butter and flour the bottom of your choice of pans. Pour cake mix into pan and bake for about 30 minutes or until a toothpick inserted into the middle of the cake comes out clean. Let cake cool. Ice with cream cheese or butter cream frosting. Try to refrain from inhaling in a single gulp. |
